As a big fan of late 60's R&B, I've always loved Otis Redding and Wilson Pickett. Sam and Dave and David Ruffin of the Temps too.
Among recent variety R&B singers, I love me some Amy Winehouse. For those who aren't familiar with Amy other than "Rehab" and assume she's more hype than chops, I recommend her recording of "Tears Dry on Your Own." This song has an entirely original lyric and melody sung over an instrumental arrangement of the old chestnut "Ain't No Mountain High Enough" Stunning IMHO.
