I always marinate anything I'm grilling in garlic oil.
I think most marinades overpower the flavor of the meat or fish. Chicken needs all the help it can get. I never cook chicken breats. They are one of the most nothing pieces of meat there are and unless you barely cook them, they are dry and stringy.
My favorite marinade for chicken thighs is very simple - garlic oil, lime juice, fresh thyme, salt and pepper for about 2 hours.
Lamb can handle marinades because of its stronger flavor. In fact I' grilling some chops tonight and they will be marinated in minced garlic, fresh thyme, pepper and a bit of balsamic vinegar for couple of hours. I salt a few minutes before I cook the meat.
I'm not a big fan of store bought concoctions, they have stuff in them that are more chemicals than flavorings.
