This is mine:
Yum, you can't beat it on an ice-cold wedge of iceberg lettuce!

Just the thing to preface a peanut butter and banana sandwich, with a side of tater tots. It's what's for dinner!

this is another family favorite... but we usually dispensed with the cheese and mustard and substituted mayonaise.
2 slices white bread
1-2 slice bologna (depending on preference)
1/8 teaspoon oil
1 slice American cheese
1 tablespoon mustard
Put oil in a frying pan and heat to med. high.
Put slit in bologna from middle to all the way through the end.
Put bologna in heated oil.
Brown both sides.
Add cheese to top while last side is browning.
Spread mustard on both sides of bread.
Add bologna between slices and gobble it up!

I've watched this video several times, trying to get an idea where the best "Thousand Island and Iceberg Lettuce" salad is in San Francisco.
I think Thomas Keller mentions it toward the end of the video, but I am not sure what he said.
http://www.youtube.com/watch?v=X5gN2...elated&search=
By the way, I think he was preparing Concassé to add to his own Thousand Island at the beginning of the video.

Chili Mac Recipe
From Diana Rattray,
Your Guide to Southern U.S. Cuisine.
Ground beef and macaroni skillet recipe with beans and other chili seasonings.
INGREDIENTS:
1/2 cup chopped onion
1 pound lean ground beef
1 tablespoon vegetable oil
8 ounces elbow macaroni
1 can (16 ounces) kidney beans, undrained
1 large can (16 ounces) tomato sauce
1 cup water
1 teaspoon chili powder
1 teaspoon salt
1 cup shredded Cheddar cheese
PREPARATION:
In a large skillet, brown onion with ground beef. Add macaroni, kidney beans, tomato sauce, water, chili powder, and salt. Cover and simmer for 15 minutes. Add 1 cup shredded cheddar cheese; cover and continue to heat until cheese is melted.
Chili Mac Recipe Serves 4.
When I am out of macaroni, a bag or two of Fritos will do:
Frito Pie
3 cups Fritos corn chips
3/4 cup chopped onion
1 cup grated cheddar cheese
2-1/2 cups chili (your favorite -- homemade, canned, whatever)
Preheat oven to 350°F.
Spread 2 cups of Fritos in a baking dish. Sprinkle half the onion and half the cheese over the Fritos. Pour the chili over the onion and cheese. Sprinkle the remaining Fritos, onion and cheese over the chili.
Bake for 15 or 20 minutes and cheese is bubbly. Serve hot.

On a plate, the real stuff wins out, but the Mary Kitchen hash's flavor acquires mysterious power when consumed directly from the can.
