I assumed this was abouth church organists - probably becauce I was listening to Jormin's new recording yesterday that includes a female organist. Marilyn Crispell plays the piano. She turned down the offer to play organ, I believe.
Fats Waller played the church organ, but let's concentrate on the living:
This man, Nils Lindberg, composed and arranged for Ellington, and turned down an offer touring with him:
 turned 70 in 2003
It's possible that most jazz is recorded on church organs in Sweden.

I like Larry Young too..don't get me wrong, RC.
Jimmy McGriff, Lonnie Smith and Joey DeFrancesco as well.
But for pure grease and bluesy Jazz, NObody tops Jimmy Smith, IMO.

It was a gas to hear/see the Jimmy Smith Trio in 1962 at the old Howard Theatre in Washington D.C.. That was my first live experience with a jazz organist, but not the last. I also had the opportunity to play with a local favorite, a Jimmy Smith freak, "Herbie", a few times. With his fleet feet, we were a trio. Great fun.
My mother-in-law was a church organist for many years, and has an organ in her home in Hope, Alaska. She always admired E. Power Biggs, and played on church pipe organs whenever she had a chance. She also played a tiny antique pump organ at Hope for Christmas Eve services many times to the great enjoyment of many.
I dig Jimmy Smith and Larry Young for similar but different reasons. Also, Shirley Scott and Brother Jack McDuff. Overall, Larry Young would probably get my vote for consistency, however.

Maybe not my favorite (but in the top five), but definitely one of the most original voices on the instrument.
Since I play organ, I'm jaded as to the player who influenced me the most, as opposed to the player I would probably enjoy the most if I didn't play the B3. So my vote has to go to Brian Auger, with a lot of respect due the others.
